Greek pasta salad

Serves 10 as a main course


  • 150ml olive oil
  • ½  lemon juice
  • 3tbsp red wine vinegar
  • 1 garlic cloves, crushed
  • 1tsp dried oregano
  • ½ tsp Sweet ’N Low Stevia for chefs
  • Seasoning



  • 700g dried penne pasta or other pasta shape
  • 1 cucumber, diced
  • 1 small red onion, diced
  • 300g cherry tomatoes, halved
  • 100g baby spinach, washed
  • 200g feta, crumbled


  1. To make the dressing combine all the ingredients and mix well. Check seasoning.
  2. Cook pasta according to pack instructions and refresh under cold running water to cool quickly. Transfer to a large bowl.
  3. Add cucumber, onion, tomatoes and spinach then pour over the dressing and toss.
  4. Sprinkle over the crumbled feta.


Delicious served with warm ciabatta



½ tsp Sweet ’N Low Stevia for chefs replaces 1tbsp caster sugar
