Banana Bread

  • 280g plain flour
  • 1tsp bicarbonate soda
  • ½ tsp salt
  • 100g butter
  • 100g caster sugar
  • 10g Sweet ’N Low Stevia for chefs
  • 2 eggs, beaten
  • 4 ripe bananas, mashed
  • 85ml butter milk or milk mixed with 1.5tsp lemon juice
  • 1tsp vanilla extract


  1. Preheat the oven to 180C/Gas 4. Grease and line a 20cm x 12.5cm loaf tin.
  2. Sift flour, bicarb and salt into a large mixing bowl.
  3. In a separate bowl cream the butter, sugar and Sweet ’N Low Stevia for chefs until light and fluffy.
  4. Add the eggs, bananas, butter milk and vanilla and mix well. Gently fold in the flour.
  5. Pour the cake mixture into the tin and bake for approximately 1hour or until the cake is well risen and golden brown.
  6. Cool in the tin before turning out onto a wire rack to cool completely.

10g Sweet ’N Low Stevia for chefs replaces 100g caster sugar
